Saffron infused olive oil recipes

Saffron Prawn Cocktail

This fits into my category of 'quick, easy and spectacular' using our new saffron infused olive oil.

Frozen prawns

Bought mayonnaise - I use Best Foods/Hellmanns

1 clove garlic

Saffron infused olive oil

2-3 strands of saffron (optional)

Salt and pepper

Cos lettuce

Defrost the prawns (about 6 per person, depending on the size). Place one spoonful of mayonnaise per person in a large bowl. Crush the garlic and add to the mayonnaise. Pour in saffron infused oil until it has a consistency which is just before pouring but still solid. Add saffron strands if using. Season with salt and pepper. Stir well.

Refrigerate for a couple of hours to let the flavours meld together.

Just before serving, add the prawns to the mayonnaise and thoroughly coat them.

Tear the lettuce onto plates or dishes and top with the prawn mixture. Drizzle with a dash of saffron oil and enjoy.
