Eggs for 4 (with acknowledgements to Julie Biuso)
6 free range eggs at room temperature
Sea salt
2 tablespoons coarsely chopped parsley
1 tablespoon finely chopped fresh new garlic
Freshly ground black pepper to taste
Paprika
Small black olives (optional)
Extra virgin olive oil
Cook the eggs for 8 minutes in gently boiling water. Drain off water and then let the cold running water run over eggs for 5 minutes to cool them quickly. Shell carefully because they will be fragile, cut in half and arrange on a plate.
Sprinkle eggs with a little salt, parsley and garlic. Grind over on black pepper, sieve over some paprika. and garnish with olives if using. Drizzle liberally with EVOO and serve immediately with good crusty bread to mop up the oil.
I have used quail eggs with this recipe if making canapés for drinks. Serve with toothpicks. This is a quick fabulously flavoured dish. Delicious as a quick lunch or a girls’ dinner.
